Pileće šnicle istanjimo kuvarskim čekićem, posolimo, pobiberimo i pržimo u tiganju na zagrejanom ulju. U drugom tiganju na zagrejano ulje stavimo sitno isečen crni luk da se prži. Kada luk omekša u tiganj dodamo šampinjone isečene na tanke listove, posolimo, pobiberimo i promešamo.
Pripremamo bešamel sos. U šerpu, na šporetu stavimo puter. Na rastopljen puter dodamo brašno i mešamo. Kada se brašno proprži u šerpu sipamo mleko neprestano mešajući. Kada bešamel sos dobije odgovarajuću gustinu sklonimo šerpu sa šporeta, sos posolimo i promešamo. Ispržene šnicle poređamo u nauljenu vatrostalnu posudu. Na svaku šniclu nanesemo fil od šampinjona i luka. Na fil nanesemo bešamel sos a na njega sitno izrendamo kačkavalj. Pečemo 5 minuta na 200 °C. Na tanjir serviramo filovane pileće šnicle i poslužimo dok su tople.
Filled chicken stakes
Ingredients needed
200 gr kačkavalj ( cheese)
4 thick chicken stakes
300 gr fresh mushrooms
500 ml milk
1 onion
2 tablespoons of flour
100 gr butter
Salt and pepper
Oil
Pound thoroughly each stake on both sides with-tenderizing mallet. Season it with salt and pepper and fry it in the heated oil. In another skilled heat some oil and sauté some chopped onion in it. When onions become soft, add sliced mushrooms, salt and pepper and stir together. Prepare béchamel sauce.In a medium heavy saucepan, melt butter over low heat. When butter starts to foam, add the flour all at once, mixing well with a wooden spoon. Cook over low heat 3 to 4 minutes, stirring constantly to incorporate and cook flour. Add milk and simmer, stirring gently with a wire whisk or wooden spoon. Cook, stirring, over low heat till you reach desired thickness. Add salt, white pepper to taste. Arrange fried stakes into greased baking dish. On top of each stake spread stuffing made from mushrooms and onion. Cover with béchamel sauce and shred some cheese on top. Bake for 5 minutes on200 °C. Serve while warm.
